Mini Pesto & Cheese Scrolls

Mini Pesto & Cheese Scrolls are a quick and delicious savoury snack made with flaky puff pastry, fragrant basil pesto and melted cheese. Each scroll is filled with a flavourful combination of mozzarella, parmesan and spring onions, then rolled and baked until golden, crisp and perfectly puffed. 

These bite-sized pesto cheese scrolls are easy to prepare and perfect for entertaining, lunchboxes, picnics or party platters. Ready in under 30 minutes and suitable for both oven and air fryer cooking, they’re best served warm with extra pesto and fresh basil for a simple yet crowd-pleasing appetiser.

Ingredients

  • 3 sheets Pampas Puff Pastry, just thawed
  • 2/3 cup basil pesto & extra, to serve (optional)
  • 1 ¼ cups grated mozzarella cheese
  • ⅓ cup finely grated parmesan
  • 3 spring onions, finely chopped
  • 1 egg, lightly beaten
  • Small basil leaves, to garnish (optional)

Method

Method - Oven

  1. Preheat oven to 200°C (180°C fan-forced). Line 2 trays with baking paper.
  2. Lay 1 sheet of pastry on a clean surface. Spread 1/3 of the pesto evenly over the pastry, leaving a 1cm border. Sprinkle with 1/3 of the cheeses and spring onion. Roll the puff pastry into a log (not too tight). Repeat with remaining pastry, pesto, cheeses & spring onion. Chill for 15 minutes if time allows.
  3. Cut each log in half then cut each half into 5 pieces. Tuck the end of the pastry under each scroll and place on trays, allowing 1-2 cm space between scrolls. Brush with egg wash.
  4. Bake for 15-20 minutes or until puffed and golden brown.   Serve scrolls with extra pesto and garnish with basil leaves (optional).

 

Method - Air Fryer

  1. Prepare scrolls as above.
  2. Lightly grease basket or line it with air fryer-safe baking paper.
  3. Place the scrolls in a single layer with at least 1–2 cm of space between each piece to allow the pastry to puff and crisp. Cook in batches.
  4. Air fry at 180°C for 10-12 minutes until golden and puffed. Serve scrolls with extra pesto and garnish with basil leaves (optional).
